I have to tell you though that I sometimes actually do cook carrots with the potatoes and mash them all together - - it is actually quite good (and you can eat orange mashed potatoes!)


Amen! I'm making a BIG pot for Thanksgiving Sunday too. Potatoes, butter and cream...something that good CAN'T be good for me and know what? Don't care.


Thank goodness for butter-filled, creamy mashed potatoes!


As long as the potatoes are present, Becky, it's OK by me :)

I have a recipe for Popped Cauliflower! It sounds interesting, that's all I can say. I guess I healthy version of Popcorn?!


If you want some really good tasting cauliflower, start with a head of cauliflower, chop, and boil untill tender in chicken broth, then, drain, and add 1/2 cup salted butter, 2 1/2 cups sharp cheddar cheese, 3 roasted and chopped garlic cloves, and 1/2 cup whole cream, for a variation, add 1/2 cup of crispy bacon pieces, and , if cauliflower is not available, Oregon Gold baking potatoes can be substituted. Never ever serve Cauliflower with equal portions of cheese!!! P.S. my bi-pass is scheduled for next Tuesday, the Doctor said he'd give me the family discount rate.

I admit to liking cauliflower puree, however, a substitute for mashed potatoes it most surely is not!

I think it would be possible for me to live on mashed potatoes alone. I really do LOVE them!

I concur New Diva. I don't mind the mashed cauliflower. It's the assertion that they make a suitable substitute for mashed potatoes that ticks me off.


I do like califlower boiled, steamed, microwaved = HOT, then put a slice of cheese on it, mmm good.
